When I was in 4H, one of the other kids was from a family that did Emu, they only ever made money on emus when selling them to other people who thought they were going to start farming emus. The market wasn’t great for the eggs or meat and they took a lot of vet care compared to cows or goats.
They have a quite high metabolism so they eat decent ammounts of food for their size (and more specific food than juat grass like cows), dont have that much meat and dont produce milk
However i would take pigs out the farms in favour of ratites. Maybe we should genetically modify birdcels to get our meat from dinosharts in revenge for their crimes

The point is to avoid the liver, which contains all the waste materials that travel up the foodchain he mentions, and notably toxic amounts of vitamin A.

Polar bears don't have much to fear in the way of toxins by apex predator standards, and they are not a major part of inuit diets, they mostly consume seals and walruses which by all accounts taste far better due to their copious amounts of fat and blubber which help keep the meat tender.
Also I'm fairly sure polar bears have roundworms and dangerous amounts of iron in their bodies which could easily be deadly if eaten in large amounts and not prepared correctly.

Yeah I severely doubt Eskimos armed with spears and arrows are taking down polar bears for casual lunch or something, at best it was probably something of a last resort that was rightfully recognized as very dangerous and probably lead to its fair share of deaths
