Farming is a business. Not a license to kill. Dead dogs arent worth money. Living dogs that arent shelter shitbulls are. Don't buy from that breeder again and tell everyone that the dog from them was a lamb killer so nobody else has that problem. The breeder needs to be held accountable for the tendency, and with a guard animal that's THE important trait.
It isn’t that difficult to frick up a LGD. Plenty of them regularly kill and eat animal species that they haven’t been bonded to, to the point where it’s the main diet of some. It’s on the owner to safely and gradually introduce the dog to his flock and be proactive about heading off potential conflicts. A dog with the most perfect awesome guardian genes still needs to be desensitized and watched carefully when it’s being introduced to something completely new and different like lambing season for the first time. Good instincts are easy to misplace- b***hes especially might casually meander over and instantly gobble down a lamb just because they see it as an inferior weakling sheep that is a risk to the rest of the flock, even more so when the ewe isn’t interested in it much either. Mostly, it’s usually just stuff like what
mentioned. Lambing season is busy and stressful af and you’re constantly out there with your sheep. You’ll definitely notice that the dog is acting up long before it hunts down a lamb. The mothers aren’t going to be completely indifferent to healthy lambs they’ve accepted already being attacked/stalked either, and you’ll definitely notice their odd behavior too if you’re actually out there minding your flock.

I adopted a pyr puppy years back from a rancher who said she wasn't doing her job like other pups in the litter. I raised her in a house and socialized her exclusively with humans and dogs for the first five years at which point I introduced goats, chickens, ducks and cats.
From five to seven she was hybrid pet, LGD and for the last year entirely LGD, on a family friends farm.
The only 'crime' she has committed is eating an occasional fresh egg which is a fair compromise for her health and my fault as I would often take a fresh egg directly from the coup and crack it into her food bowl with her watching, ie taught the behavior to her.
I suspect OP is a smelly shit skin who thinks the dog is a slave rather than a partner. You can't order these breeds around, they are highly intelligent independent thinkers. Your job is to gain establish trust, give love and guidance and on very rare occasions, discipline. These dogs also require a GOOD DIET consisting of fresh meat, organs, eggs etc and should not be allowed to go hungry.
Because these dogs have a 6000+ year long lineage that results in instinctual behavior like barking, patrolling, and protecting with an emotional intelligence similar to a 12 year old white male obviously better than OP. Literally a gift from the gods.
