    Impressive, but why would the coyotes fight him? Most predators back off once the prey fights back, why did the coyotes not run away once the first one fell? Like he killed 8 of them, and at no point did they decide that it wasn't worth it?

        How about no. They probably had coydog/coywolf mystery meat ancestry juicing them up to be even bolder and more pack oriented than normal coyotes. Probably killed and ate dogs on the regular too and thought they were hot shit. They saw one dog, their alpha went on the attack and got got. The rest come in acting defensively because the boss is getting maimed and they get picked off one by one trapped in a cycle of reflexively defending their hurt companions against a dog bred specifically for intercepting predators in all weather every day of the week.
