      They grow from an area of spongy bone. Baby rhinos don’t have a horn but they do have a lump that grows into one from birth

          Well, Jackalope most likely originated from disease ridden rabbits, so, you never know.
          Like cyclops most likely originated from elephant fossils, and so on.
          Of course you can't say that's the case for every folkloric shit, but when they all are "X but Y" or a mashup of existing animals...
